executive chef - JAMES CROSSMAN

James began his 22-year kitchen career as an apprentice at Nottingham's premiere French restaurant Petit Paris under the tutorage of Head Chef Jean Louis David where he discovered his love for fine dining. At just 19, James joined the sauce section at Claridges London where, under the guidance of Gordon Ramsay, the team gained a Michelin star in 2002. His love for French cuisine developed further when he joined the brigade of a Michelin starred kitchen in Cannes, training under some of the best chefs in the country.

An exciting opportunity as Junior Sous Chef emerged at the prestigious Hart's Hotel & Kitchen in Nottingham which allowed James to move back to the East Midlands. Using his wealth of experience from working in some of the best kitchens in the country, James opened 'Seasons' in Beeston in 200X to much critical acclaim. His story came full circle when in 2011 he became Head Chef and eventual owner of Petit Paris on Kings Walk. James has ensured that one of Nottingham's best-loved restaurants has remained just as popular now as when it opened over 25 years ago.
